For the last few months, Grant and I have been eating the same breakfast almost everyday. If I am making him a warm breakfast, Grant will eat almost anything without complaint since he isn’t doing the work. This breakfast has just been hitting the spot for me since it is really filling, isn’t bad for you, and has a little bit of a sweet taste to it. Below are my step by step directions for making French Toast Scramble.

Sorry about the silence lately, we have been having issues with our blog host, and poor Grant has spent hours with “live chat” customer support, and anyone else he can get a hold of. Eventually I think we have it figured out,but wish it hadn’t been such a hassle for him. Oh well. Starting in January, I have been trying to do a better job of not wasting food, not going grocery shopping more than 2 times a week, and having an actual meal plan. It is very easy to make a meal plan,but it actually takes you sitting on your butt, writing it out, and shopping for those ingredients. Even though I have been doing a weekly meal plan, we haven’t eating these things each time, but I figured why not share them since I am already doing all this work.
My husband loves a hearty breakfast which is where Keto is awesome! Bacon and eggs really stick with you longer than cereal, a muffin, or pancakes. But cooking every morning can get a little wearing. So I decided to make a Keto version of one of our favorite breakfast casseroles. There are a lot of different Keto breakfast casseroles or “quiches” out there, but a lot of them have spinach or another vegetable in them that Grant finds weird in that dish. So here is one that we really like.
So I understand that this post might seem kinda “Duh” to most people,but when Grant and I first started eating Keto we realized that the way we normally drank coffee wasn’t really gonna cut it with Keto. I had searched online for a good post with ingredients and ratios and didn’t find any that I liked the taste of. We were making full blown lattes before starting our diet. I used to work at Panera and enjoy the process. So, I would steam milk and add in Torani syrup and coffee. It tasted great, when we didn’t do lattes we would drink coffee with the store bought creamers. For a while I was trying to make my own creamers,but none tasted as good as the store bought stuff. So, for hot or iced coffee, we use the recipe below.
So during our Keto diet, we have been eating mainly bacon and eggs, pancakes, or these Jalapeno Egg Muffins for breakfast. While these are all very tasty, I am a sucker for either oatmeal, malt-o-meal, or cream of wheat type of breakfasts. Only problem is they are all carb loaded so I haven’t even tried anything similar. Then I read on another blog about this Grain Free Hot Cereal and decided to give it a try because more fiber is always great and no carbs!
