by Jessica February 26, 2013

So Grant and I have been wanting some lasagna, so after his request, I decided to try Zucchini Lasagna. I have never made it before, so I read up on how to make it. I have a great lasagna recipe that I wanted to follow, but wanted to make sure I correctly do the zucchini portion.

Keto Cinnamon Rolls with Cream Cheese Icing

by Jessica February 22, 2013

So, I feel like all of the recipes that I am posting are sweets. We do eat a lot of veggies I promise! Most of those recipes we eat, I have already posted like the baked squash that has been a favorite of late. Also, for lunches, I have found that taking frozen veggies like broccoli or green beans placed in a tupperware with a little bit of seasoning are great for lunches. Just microwave for a 2-3 minutes, and you have perfectly steamed veggies. Since I work from home it is easy to ignore my lunches or crave things I shouldn’t, so I have found the most effective way to eat well is to pack myself a lunch at the same time that I pack Grant’s. That way, I almost always eat what I have packed since it is easier to do that than prepare something else.

My Imperfect DIY Weekend Quilt

by Jessica February 21, 2013

For a while now, I have been eyeing this certain quilt. I am not a huge quilt person mainly because I am not always a fan of the patterns, or especially colors used on them. This is not to degrade the quilts that others make because an incredible amount of time, effort, and design go into those blankets. I grew up with my great grandma, grandma, and mom making an amazing amount of quilts among other crafty things from sewing, mending, crocheting,  knitting, etc. I made my first mini quilt which was for my fifth grade class. I was sick one day and missed the instructions, and the paper that I was given failed to mention that it needed to be made from construction paper. So, I thought I had to sew a real quilt. I think it had to be 2′ by 2′ so pretty small. Anyway, within a few days and my mom’s verbal instructions, I made this small quilt. I then felt like an idiot when everyone else had a paper one,but now my nieces in Austin use it for their baby dolls so I guess not a total fail after all.

Keto Mint Chocolate Chip Ice Cream

by Jessica February 20, 2013

Since we have started our diet, we haven’t felt very restricted; there are a few things that we crave but nothing to terrible…. I have a HORRIBLE sweet tooth, so I am always on the look out for good desserts that I can have. Grant and I like ice cream, but I normally don’t crave it very often unless it is moose tracks/happy tracks.  I stay far away from that crack as I can cause once you pop you can’t stop. Anyway, for my birthday, I got an Amazon gift card from Amanda & Bryan, and I had been looking at buying a certain something for a while, and broke down and got it with that gift card.

by Jessica February 19, 2013

Grant and I have been eating Pork a lot, and one of my favorite recipes is Teriyaki Pork that my Sister-in-Law, Sarina, showed us. But I was wanting something different, and happened to stumble on this recipe that happens to be Keto as well.  http://allrecipes.com/Recipe/Simple-Time-Pork-Chops/Detail.aspx

Glasses Fail

by Jessica February 18, 2013

So a year or two ago, I got a pair of almost free glasses when costal contacts was having a deal. My old pair was an old prescription and looking terrible since the sides of them were turning white since my hair spray was messing it up. So I took the measurements off that pair and got a pair as close as possible. I had to pay shipping and for more expensive lenses because my prescription is higher, but $35 dollars for a pair of glasses was a steal to me. They lasted me long enough for me to get my money’s worth, but last week I was drying the lenses, and they literally  just broke in half in my hand. I am REALLY careful with my glasses and my last two pairs have lasted over 6 years without any scratches on the lenses so I was sad. I have another pair of frameless glasses that I am wearing now and contacts as well. I was wondering if there was a way to fix them. So I googled it.
