Here is one of the other desserts that I made for the family reunion this last weekend. I have never been a fan of pecan pie, but this recipe for a chocolate spiked pecan pie is very good.

This last weekend, we went to Grant’s Family Reunion in North Carolina from Friday through Sunday morning. It was a wonderful visit, and it was so nice to finally get to see all of his Mom, Sister, Brother-in-Law, Aunts, Uncles, and Cousins again. Most of the menu was already planned since everyone there is a great cook/baker. So, I brought some desserts to add to the celebrations since all the main meals were already covered. Also, the desserts I made traveled well so that is always a plus. So here is my apple crumb pie that I made the day before our trip.
Sorry about the long break in posting, this is not what we meant to do! We took the time and updated the blog, which changing a lot of the photos took some time, and after that we have been super busy! Memorial day weekend we took it really easy because we knew this month of June would be NON STOP for us. So on the weekend of the first we drove to Nashville to rent a pontoon boat with Kira and Andrew. Well, it looked like it was going to rain and was forecasted so we had to reschedule for a different day, but then of course it never rained! Kira and I went to see Amy and swim in her pool instead. Then this last weekend we had a Family Union for Grant’s Family to attend as well as Kira’s Baby Shower. So, the next posts you will see will be from our trip or recipes I made for that trip. I always get recipe inspiration from all of the other great blogs that I read. The Pioneer Woman’s blog ALWAYS has amazing recipes, and the other day I realized that salisbury steak could easily be made into a Keto friendly recipe. Her blog has the recipe written out and much better step by step instructions than mine,but since hers isn’t Keto, I decided to give it a try.
So while living in Austin, TX I learned to love and crave some fish or shrimp Tacos. I really liked Torchy’s Baja Shrimp taco, but had some Tilapia Fillets to use up so I found a copy cat recipe online and decided to make it more Keto. This is a higher carb meal if you eat it with low carb tortillas, but could make your own, but we had a lot of carbs left over for dinner. Below is how I made them, they are a little more work,but boy are they amazing!
Grant and I don’t got out to eat much,but we do have a special place in our hearts for a good burger. While living in Austin, TX we LOVED Dan’s Hamburgers, but here that is not an option. Since we are still eating KETO, we have enjoyed Five Guys Burger and Frys especially since they have a really nice set up for a bunless burger where they give you TONS of toppings and a nice dish so you can easily eat it with a fork and knife. So I had a hankering for some Five Guys but decided to make my favorite version at home since I had everything for it.
