Some Great New Recipes!!

Lately, I have been wanting to try new recipes. I have a lot of great ones from friends and family,but a lot of our favorites are pastas and things with whipping cream, and I was wanting to branch out. Here are some great ones that I came across!!!

Tender Italian Baked Chicken

Prep Time: 10 Min
Cook Time: 20 Min
Ready In: 30 Min

Servings

Original Recipe Yield 4 servings

Ingredients

  • 3/4 cup mayonnaise(I used Miracle Whip)
  • 1/2 cup grated Parmesan cheese
  • 3/4 teaspoon garlic powder
  • 3/4 cup Italian seasoned bread crumbs
  • 4 skinless, boneless chicken breast halves

Directions

  1. Preheat oven to 425 degrees F (220 degrees C).
  2. In a bowl, mix the mayonnaise, Parmesan cheese, and garlic powder. Place bread crumbs in a separate bowl. Dip chicken into the mayonnaise mixture, then into the bread crumbs to coat. Arrange coated chicken on a baking sheet.
  3. Bake 20 minutes in the preheated oven, or until chicken juices run clear and coating is golden brown.

Superfast Asparagus (KETO)

Ingredients

  • 1 pound asparagus
  • 1 teaspoon Cajun seasoning

Directions

  1. Preheat oven to 425 degrees F (220 degrees C).
  2. Snap the asparagus at the tender part of the stalk. Arrange spears in one layer on a baking sheet. Spray lightly with nonstick spray; sprinkle with the Cajun seasoning.

Roasted Potatoes

Prep Time: 5 Min
Cook Time: 30 Min
Ready In: 45 Min

Ingredients

  • Red Potatoes, washed and sliced
  • 1 Tablespoon seasoning(I used a seasoning packet from Walmart)
  • 1Tablespoon of Olive Oil

Directions

  1. Preheat oven to 425 degrees F (220 degrees C).
  2. slice the Potatoes and put them in a casserole dish, add the other ingredients and mix until everything is well coated.
  3. Bake in the preheated oven until tender, about 30 minutes.
  4. Check they are done when they easily break apart and are white and fluffy on the inside.

*** The nice thing about the above recipes, is you can easily pick how much you want. This could be made with two chicken breasts, one potatoes, etc. Easily portion-able for any size group eating this.***

Catherine’s Cajun Shrimp Greatness!!!!

Ingredients for Shrimp

  • 2 teaspoons paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon cayenne pepper ( This is what makes it very spicy, so I only used half of this since I was using the Hot Rotel.)
  • 1 tablespoon olive or canola oil
  • 1 pound uncooked medium shrimp, peeled and deveined

Directions

  1. In a large nonstick skillet, saute the paprika, thyme, salt, nutmeg, garlic powder and cayenne in oil for 30 seconds, stirring constantly. Add shrimp; saute for 2-3 minutes or until shrimp turn pink, stirring occasionally. Set aside in a large bowl and wait to add rice Portion.

Ingredients for Rice Portion

  • I packet or box or Spanish Rice either Rice a Roni or Off Brand (I used Great Value)
  • 1 Can of Rotel

Directions

  1. Follow the directions on the rice boiling 2 cups of water and the butter, and add the rice portion. Here I added the liquid from the Rotel can and then enough water to make it the 2 cups or however much your box directions call for. Then I added all of the rice mixture and stuff in the bag and the rest of the Rotel can. ( I used the hot Rotel)


  1. Once it has simmered, and all of the excess water boiled or soaked up. Add this to the shrimp mixture, stir, and serve hot!
